Base Camp
This base malt is produced from a proprietary mix of 2-row barleys. The flavors are clean and grassy. Great for all hop forward styles.
Chesapeake Pilsner
This base malt creates a nice mix of bread crumb and sweet aromatics, followed by a crisp green tea note in the finish. Perfect for more hop-forward lager styles.
Cumberland Pilsner
Formerly Avalon Pilsner.
This base malt yields lots of fruit and sweet bread notes upfront, followed by a nice floral finish. Perfect for a wide variety of malt forward lager styles.
Czech-Style Pilsner
This truly undermodified base malt delivers a touch grainy sweetness, followed by notes of cooked rice and pear. It finishes with fresh cut wildflowers and hay. All of this contributes nicely to the more full-bodied lagers associated with this region.
Regenified™ Southern Select
Made from 2-row barley grown on Regenified™ certified farms, this Pale Ale style malt has aromas of sugar cookie, melon, and honey with a rich mouthfeel. Use this malt in the same recipes as Southern Select where you want to highlight regenerative farming practices.
Southern Select
Formerly Avalon Pale.
This malt uses a blend of regionally sourced 2-row barley varieties. Flavors include notes of biscuit, fresh grassy and honeysuckle. Perfect for Lagers or Session IPAs.
Specialty Malts
Double Kilned Munich
Double Kilned Munich makes two trips through the kiln, a process that helps develop the complex flavors and increases color to approximately 50 SRM. This malt will contribute a beautiful, ruby red hue and notes of dark fruit and toffee with a touch of fresh roasted coffee.
Great Chit
This under-modified malt is produced using Southern-grown 2-row barley. Contributes to foam stability and mouthfeel in IPAs and Lagers. Use it in place of raw grains or dextrin malts.
Vienna
This malt is produced from a proprietary blend of 2-row barleys. Richer and slightly darker than Southern Select with a breadier profile.
Light Munich
This malt is a blend of 2-row barley varieties. With rich flavors of fresh bread and honey, this product is good for German Bocks, Helles and American Single Malt recipes.
Dark Munich
Produced using a blend of 2-row barley varieties, this malt has notes of baking spices, chocolate, toast and stone fruit. Perfect for Brown Ales, Barleywines and German Doppelbocks.
Appalachian Wheat
This malt is produced using soft red wheat. The flavors are baked artisan bread and toast. Good for Hefeweizen and Farmhouse styles.
Fresh From Florida Certified Wheat
Produced using soft red winter wheat from Murphy Farms in Jennings, Florida and Kilned just like our Appalachian Wheat to create something special for your next Hefeweizen or multi-grain lager, this year's crop delivers a rich nuttiness, with a touch spice and a delicate earthiness in the finish.
Golden Wheat
Top quality white wheat is germinated and kilned like our Vienna. We get big notes of breakfast cereal in the finished product. Think Golden Grahams swimming in a nutty, freshly made pie crust.
Pecan Smoked Wheat
This malt is produced using our Appalachian Wheat and locally-sourced Pecan wood. The pecan imparts a delicious, fruity that blends perfectly the bread notes of the malted wheat.
Carolina Rye
Made from the heirloom rye grain Wrens Abruzzi, this malt has an earthy, black peppercorn, citrus and herbal spice blend flavor. Try it in a Saison, IPA or Bourbon.
Munich Rye
Crafted using a variety called Wrens Abruzzi, This malt is kilned at higher temperatures throughout and delivers notes of pumpernickel bread, cardamon, and allspice.
Speakeasy
A higher enzyme malt that doesn't sacrifice flavor: This malt utilizes the highest-quality lots of 2-row barley along with an extended, cool germination, and gentle kilning to create a malt that shines in the distillery.
Cumberland Corn Malt
Made from a food-grade, Southern-grown dent corn, this malt is earthy and fresh with a sweet cornbread flavor. Great for Mexican Lager recipes.
Bloody Butcher Corn
Produced from heirloom corn, this malt product yields notes of baking spice and clove. Great for American Lager and Bourbon recipes.
Crystal 20 Malt
Crystal 20 is produced using a proprietary kilning technique that mimics the stages of a standard roasting profile without the intense heat. The result is a truly crystalized malt that delivers light caramel and toffee supported by hints of pumpernickel and black tea. Try it in a multi-grain lager or pub ale recipe.
Crystal 50 Malt
Crystal 50 is produced using a proprietary kilning technique that mimics the stages of a standard roasting profile without the intense heat. The result is a truly crystalized malt that delivers syrupy smooth toffee supported by hints of coffee and dark chocolate. Try it in a classic American Pale Ale or English Brown recipe.
Crystal 80 Malt
Crystal 80, the darkest in our portfolio, is a truly crystalized malt that delivers syrupy smooth dark cherry, bakers chocolate, finishing with a touch of coffee cake and oak. Try it in a classic English Mild or Barleywine recipe.
Honey Malt
Inspired by the "brumaltz" produced in Germany, this malt has pronounced sweet notes of maple syrup and fig with a finish that blends in black tea and oak tannins. Great for Belgian Dubbel or English Brown recipes.
Hull and Oats
This malt, produced from oats contains high protein levels that give them a distinguished mouthfeel making them good for NEIPAs and Stouts.
