HERITAGE MALT

This 6-row malt is produced from Thoroughbred barley grown in near Salisbury, NC. It makes the perfect base malt for a variety of darker styles, such as a Vienna Lager, German Alt or California Common. It has a more pronounced flavor and aroma profile than our Pale Malt, which contributes a slight nutty flavor, but allows the specialty grains to take center stage.

PALE MALT

This 6-row malt is produced from the same Thoroughbred barley as our Heritage Malt, but is kilned at lower temperatures. These lower temperatures limit the formation of melanoidins in the finished malt and preserve enzymes. Flavor and aroma are more subdued with this product which is suitable for use in a broad array of styles ranging from lagers to Belgian ales.

PILSNER MALT

This 6-row malt is produced from the same Thoroughbred barley as our Pale Malt, but is slightly under-modified and kilned even cooler temperatures. The shorter germination period and lower temperatures preserve the grassy,grainy flavors that characterize this style.  This malt is perfect for a variety of American or German lagers,  and Belgian ales.

APPALACHIAN WHEAT

This malt is produced using a variety of NC-grown hard wheat varieties such as Turkey Red or Appalachian White.  Hard wheat varieties are primarily used in the artisan baking industry and deliver a stronger array of flavors than traditional soft wheats.  The pronounced nutty character and rich texture of these wheats contribute to a mouth-watering Hefeweizen or White IPA recipe.

 CAROLINA RYE

This malt is produced using locally grown Wrens Abruzzi Rye, a variety that has been grown throughout the Southeast since the Civil War. This product provides those tangy, spicy flavors that can enhance a wide variety of styles.

Price: $1.00/lb.

 FUTURE RELEASES

We plan to experiment with gluten free options such as buckwheat and maybe some smoked malts for the Fall of 2013 if time allows.  Stay tuned!

    i am the one who called brent and we talked about the kingsport oktoberfest and possibility of possibly doing 50lb bags when you are able if we can pick up. hope that that does work out because more i see on your website the more i would love to do some batches with your grains

    Hi, I was just wondering where I could purchase your malt. I am beginning a brewery in Carrboro, NC called Steel String Brewery. We aren’t going to be active until about a year from now, but it would be great to use some true NC malt in some of our test batches.
