Tasting Notes:

The flavors in a Baltic Porter are driven by the malts. Expect malty dark caramel, chocolate and pipe tobacco-like flavors with a smooth finish. Baltic Porter is a strong, lagered porter. Porters are typically made with ale yeast, which can impart fruity esters. Using a more neutral lager yeast strain puts more emphasis on the complex malt flavors. Dark brown in color, porters feature dart malt flavors like a stout, but are not as intense or roasty.

Biscuit is wheat-forward with light clove and banana bread notes, but not in an overpowering way. Just enough banana and clove to know it’s a wheat beer, with retrained yeast phenolics to ensure we don’t overshadow the local grain bill. Lots of “I normally don’t like wheat beers but I love this” reactions.

⁣⁠Wilmington’s first legally produced Bourbon since prohibition. This whiskey was produced and barreled prior to the grand opening of the distillery. Quietly aging in new American Oak cask by Black Water Cooperage. The temperature variations that naturally occur through the season within the distillery helped to develop deep characteristic of the whiskey within.
